Beta vulgaris subsp. cicla
The edible parts are the large, fleshy burgundy-green leaves, which are prepared like spinach, and the juicy red leaf stalks, which are prepared and taste like asparagus. The leaves and leaf stalks are rich in easily digestible protein, iron, calcium, and vitamins. Sow 2–3 cm deep from mid-April to late June. Harvest 70 days after sowing.
