Levisticum officinale
A perennial herb used for both culinary and medicinal purposes. Fresh leaves are added to salads, tomato soups, meats, and sauces. Dried rhizomes are suitable for stews, tripe, poultry, and mutton. It stimulates the appetite, regulates digestion, and has diuretic properties. Sow directly in the ground or in a seedbed in May–June or August. Transplant to a permanent location in August for spring sowing, or in April of the following year for summer sowing. Harvest in the second year of cultivation.
